Now that I am back to work with a full-time job, I have started to prep my breakfasts and lunches the night before. I have found this so much easier instead of trying to do it the morning of when I am still half awake before drinking my cup of coffee. It does take some planning but it is work the effort.
One thing I like doing is putting together a list of what I need to buy for breakfast and lunch for the week. I write out what I would like for lunches during the week so I can switch it up. This way I don’t have to run to the store during the week. I do like going later in the afternoon closer to dinner time so the store is less crowded.
Here is what I have been having for my breakfasts and lunches so far:
I have been having two scrambled eggs with two breakfast sausages and some shredded cheese. I prep this the night before in a container so I just have to dump it in a frying pan in the morning. I also have either peach or strawberry yogurt and a cup of coffee (the only one for the day).
For lunch I try to change it up so I don’t get bored with what I am having. Some examples are:
Ham and cracker sandwiches, Babybel cheese, snow peas, apple slices, and a chocolate square.
Tortilla ham wrap, Babybel cheese, carrots, apple slices, and a chocolate square.
Babybel cheese, cucumbers, apple slices, pretzels, peanut butter (as a dip), and a chocolate square.
Peanut butter cracker sandwiches, snow peas, apple slices, Skinny Pop Popcorn, and a chocolate square.
I know people meal prep for the whole week, but it just doesn’t work with the refrigerator space I have. I mostly wanted to share this too because some of you might feel left out that you can only do a small prep, but it works none the less.
